whilst going light on the cheese/meat?

As a former vegetarian, I'm not sure about eating so much dairy and meat.

I don't mind eggs, some fish or chicken is okay, but I really just don't want to my main source of protein to be meat or dairy. I know I'll be eating loads of eggs. LOL.

I also need menu planning ideas that are quick to prepare. Especially things I can do at work. (grocery store, I can cut things up in the deli, but I can't cook them.)

the on plan thread has been a great source of ideas and inspiration for me. Several people past and present are vegetarian on the plan. Go through get some ideas make your plans. I truly believe planing ahead is a key ingredient in success.

Welcome! I'm not a vegetarian but how about beans and lentils? Quinoa too, but that might be PH2.

I'm a veg-head. The reason I picked this plan was because of how vegetarian-friendly it is. I'd recommend making extras of your dinner to take for lunch at work the next day.

I'll have to do the opposite, since I work nights. I failed today. I started out with two eggs scrambled, 1/2 cup pinto beans, and 2 cups raw broccoli. Taco sauce to make it good. Then forgot by the time we got done with our in town appointments and got BK. So I rounded out the day with two berry pot pies and I'm starting again tomorrow. Got a new flavor of taco sauce. I think that's what is going to keep me sane through these first two weeks. Taco sauce. Please don't tell me it's not allowed.

Water, tomato paste, dried chilis, ect. It's one gram of carbohydrates per TB or so.

Carbs don't matter. Post a list of all the ingredients and we'll see if we can pick out any problem-causers.

water, tomato paste, chili powder, salt, distilled vinegar, chipotle peppers, dehydrated garlic, onion powder, xanthan gum, citric acid, .1% sodium benzoate and potassium sorbate, spice and natural flavor.

no hidden sugars, looks good. Salsa is my go to addition. We go through a couple of jars a week. Unfortunately you have to check that for sugar too but I know most of the brands around here now.
