Default I just had to share this with you all ( Nutty Eggs )

A lovely quick light lunch (Phase 1).

1 Baby Avocado
3 Boiled Eggs
3-4 Walnuts
8 Cashews Nuts
10 Pistachio Nuts
Teaspoon Feta Cheese


*Instructions*

Boil your eggs the way you like them I like mine hard.

Cut them up.

Dice your baby avocado, place them in your bowl or plate.

Then crush your nuts not to small like bread crumbs.

Sprinkle them on top of your boiled eggs and avocado.

Get your Feta cheese and sprinkle that over the eggs, avocado and nuts.

I'm telling you, I was full after eating this and it was scrummy.

Tell me what you think if you decide to make it.

This does sound good but I'd suggest eating half as a serving and having it with salad or other veggies. The daily serving for avocado is 2/3 and that's all your fat for the day. Bet this would be good over a salad of field greens and other fresh veggies!

I guess you could have it as a side dish but I prefer it on it's own.

I'm w/ Cyndi. I wouldn't eat the whole thing either...all those nuts and avocado and you've sailed on past your fat serving for the day in no time. I'd add it to a green salad or something. At the very least, I'd make it an occasional treat.
