Default Any Pumpkin Phase 1 Friendly recipes

Hi all! I resisted the urge to make some pumpkin bread yesterday.
Any Phase 1, pumpkin friendly recipe ideas?!?

jen, I don't think that pumpkin is techincally phase 1 friendly being that it is a starchy, winter squash.

that being said, you could probably put it in a smoothie for a less detrimental off plan treat. I made a good one the other day with pumpkin puree (maybe 1/4 cup), pumpkin pie spice, a good heaping spoonful of cottage cheese or ricotta and some milk (or almond milk) to get it going. you might want to add some splenda or vanilla to taste.

I have one soup pumpkin recipe :

For that roughly first chop the onions and pumpkin. Add to a large saucepan, the Onions, Pumpkin, Water and Chicken Stock Powder. Simmer until Pumpkin and Onion are very soft. The Pumpkin will begin to fall apart.Take the soup off the heat. Allow to cool for 10-15 minutes. sing a barmix, puree soup until it is all a smooth consistency.

Pumpkin is NOT allowed on South Beach Phase I so better ignore the pumpkin soup recipe until Phase II.

I just did this today. Pumpkin pie spice, cinnamon, a little vanilla extract and Splenda! It was great!

This idea of stirring pumpkin pie spice into SF yogurt just might get me past my pumpkin cravings... There is something about pumpkin anything this time of year! :-) I have need to get some more SF pumpkin coffee syrup! :-)
