What's for 4th of July (or Sunday) dinner?
What's for 4th of July dinner? or what's for Sunday dinner? for those of you from other countries.
I'm making barbecued porkchops in the SBD Diet Cola chicken fashion, with "barbecue' sauce made with the sugar-free ketchup recipe, and diet cola. Only I'm going to add some finely chopped onion and some liquid smoke.
I'm also having garlic roasted scallops (I can't wait, my mouth is watering.)
Then I'm making a big salad (romaine hearts, cello lettuce, tomato, onion, banana peppers, with buttermilk ranch.)
Another side will be green beans and maybe seasoned cauliflower.

Hamburgers on the grill made with 90% lean, maybe some RF pepperjack cheese & fresh tomato slices on them, WW buns for my family, fruit salad, assorted veggies with LF dip.

A pork schnitzel with my own mushrooms and thyme, little new potatoes with green onions, chard, cherry tomato salad with pesto and "Cousin" Ian! I really wanted Bruce Springsteen but.....

DH and I both had an icky stomach bug. We had promised our 4 year old a picnic and fireworks so we did the best we could. I had a few bites of a turkey sandwich with tomato, spinach and onion, a bunch of cut melon and some crackers.
Not great.
Feeling much better today. Hitting the gym hard today and setting a strict meal plan so I don't let myself fall back into that "i'm sick" way of eating.

You guys, that all sounds so delicious my mouth is watering!!
I ended up making a 3 bean salad in instead of the garden salad, with green beans, chickpeas, and dark kidney beans, mixed with olive oil and vinegar and garlic and seasonings. I have never had it before, but I had a basic idea, and basically made it without a recipe and it turned out SO good and filling. Tastes even better the next day.
@Zeffryn, I hope you're feeling better soon!
