I just started Phase 2 and today for lunch and had this:
A whole wheat tortilla
Chicken Breasts (a few strips)
2% sharp cheddar cheese (a sprinkling)
I made this into a quesadilla on the stove top- using Olive oil Pam.
Then I topped the quesadilla with chopped romaine lettuce, sliced tomatoes, green onions and a small dollop of guacamole.
That does sound good! I am on week 2 of PH2 but not adding things like tortillas yet... taking it slowwwww. On a previous SB stint I used WW tortillas to make pizzas topped with black beans and veggies to up my protein and veggie count. Yummy. (Cheese and sauce of course too.)
I added the whole wheat tortilla today....the first grain I have added and it seems to be ok for me so far! But that will be my only grain for the day. Tonight I am having the V8 chili that I found on a recipe thread!
