Default summer squash

hi, I had summer squash for the first time yesterday, I BAKED it for about 1 hour until soft, it was very tasty, however, I also ate the skin!!! is it ok to eat the skin, it was a small squash so the skin was not very tough, it was like the skin on a sweet pototoe, I cleaned it before baking,
just want to make sure that it is ok to eat the skin, I have another summer squash that I will be preparing next weekend( carb treat)

You can eat as much summer squash as you want. It's great to eat the skin - more fiber and nutrients there! I can't imagine baking one for an hour though. Do you know what variety it was (sounds more like a winter squash?)

it was pale orange in color, and shaped like a bell, tasted like sweet potatoe, inside was orange, not really too sure what the correct name.
it had seed in the globe part, which i scooped out.

sorry, it was a butternut squash, takes a while but I will get it right eventually.

Definitely sounds like a winter squash. It's still great to eat the skin anytime it's edible. "Winter squash (considered a starchy vegetable; count as a starch/grain serving)" same as sweet potatoes. We love winter squashes at our house and often eat them as fries. Yum

Here's the basic idea: Butternut squash Fries (not gross trust me!!!)

I've used butternut and delicata this way.

It looks like a serving is 3/4 cup, but I'm hoping someone else will help out. I'm not super careful about starchy vegetables though I am about grains. I definitely have most of my trouble with grains.

I agree Cyndi, I kind of eyeball my starch veggies and overall don't worry about the serving size too much. They don't trigger cravings and are so filling and delicious.
