Last night's supper was spaghetti squash pie, loaded with roasted veggies.
Tonight will be Chickpea & Broccoli Casserole and a green salad.
Cyndi, Gypsy Soup?

Cottage - it's an original Moosewood recipe, http://www.ivu.org/recipes/soup/gypsy.html
My favorite kind of recipe - very flexible and easy. I like the slightly different spice mix.

Cyndi, that sounds great - and I'm up to my ears in squash this Autumn. (It's one of the few things that grew really well in our garden over the cold, rainy summer.)
Thanks for the link.

Mediterranean lentil soup made in the crockpot
Spinach salad with Annie's Goddess dressing
Wedge of Spanish tortilla (yeah, there are some potatoes inside but so be it, I haven't had potatoes in ages... don't even really like them, but this tortilla was GOOD!)

Tonight it's all healthy, low fat food after last night's rather decadent dinner out (not off plan but definitely way more fat then I use).
Italian lentil soup, roasted broccoli and homemade ww bread
