Tonight I made the Zucchini and Cheese recipe found in Main Dishes - Phase 1 with a few additions. I sauteed the onion, zucchini, and pepper, but omitted the tomato and instead used 1/2 jar of spaghetti sauce. Then I added almost a full bag of the Morningstar burger crumbles, stirred it all together, and topped it with the cheese! Baked it for 25 minutes and YUM, it was good!

The only thing is I forgot that spaghetti sauce has sugar in it! So I will use homemade sauce or buy the special kind next time.

Tonight I think ww spaghetti and meat sauce with ground turkey. And tomorrow is tuna couscous salad. Or I might swap them out.

Tonight I made tacos. I was going to have mine with whole wheat tortillas but I changed my mind because I wasn't that hungry. I forced myself to eat a salad mixed with the taco fillings. Quite delish!

It was pouring last night so I refused to stop at the grocery store. Last night's dinner plan will be tonight's dinner Last night we had a spontaneous concoction of cabbage, taco crumbles, pinto beans, zucchini, adobo seasoned tomatoes & brown rice. It worked.

Hey Cottage - do you make those burgers from scratch or are they the frozen ones? I'm still looking for a good bean burger recipe that isn't loaded with bread crumbs.

No, I'm opting for the easy way out and using Morningstar Farms brand.

I love meat but not burgers. Here is a recipe I have been using . Sometimes I add an eggwhite and definitely more spices.
