I don't think it's posted anywhere because I don't think chorizo is technically legal. I looked in both soup/stew threads and didn't see it.

I don't think chorizo is Phase I or II. (Has Cyndi been posting FOOD PORN!?!)
....Unless she has chorizo made of soy which, knowing Cyndi, is entirely possible!

I am looking for the SOY chorizo recipe I am pretty sure that it is legal- I am a vegetarian and meat subs that are completely legal are kinda hard to find... so I just pretty much eat them as long as they aren't bread based or breaded!

I know I saw it around here somewhere... oh CYndi.....where are you???..... LOL I am sure someone will remember

I just logged on, Ricci, so I hope I can still help. This is the recipe I got from CyndiM.

Soy Chorizo & Bean Stew

2 cups anasazi beans
1 cup brown rice
chopped onions
chopped peppers
garlic
soy chorizo

Toss it all in a crockpot and cook til the beans are tender, about 6-8 hours.

Here's how I made it on the stovetop -
I crumbled the soy chorizo in a pan sprayed with olive oil Pam and let it brown, then added lots of onion, and garlic, and red & green pepper chunks. Let it all cook until tender, then I added a can of drained & rinsed dark red kidney beans and a can of Rotel tomatoes. I completely omitted the brown rice, and it was very satisfying even without it.

It's not posted in the recipes because I never measure anything so it's hard to really share recipes. It's an Italian thing (and I'm sticking with that!)

There are a couple of brands of veggie chorizo. I like Trader Joe's for this recipe. Lightlife makes a version that holds together more like a regular sausage and is also good in bean stews.

Thanks guys! I knew I saw it somewhere... I have it saved now! I bought some from Walmart not sure what the name of it is... dh thinks it looks disgusting, hopefully it will taste better than it looks

I am going to soak some beans tonight so I can put them in the pot tomorrow and have dinner ready when I come home! I think I will use some white beans and no rice.... trying to keep my cravings under control these days ya know! lol

the soy chorizo from Walmart isn't actually that bad, Rikki. I've had better, I've had worse..

Glad you found the recipe. I was trying to search for it, but it wouldn't include SOY in the search feature.
