South Beach Phase 1 recipe adjstment help for asparagus soup

  • Asparagus Soup
    3 lbs of asparagus (three "bunches" as they sell them in the store...I'm
    guesstimating 3lbs)
    12 oz can Evaporated milk (he doesn't use low-fat...just the regular)
    1 C Whole milk (again, you can modify to 2% or whatever)
    1 T Cornstarch (thereabouts...adjust for viscosity and texture. Mix into
    the cold milk)
    10-12 C Stock made with bottoms of asparagus stalks (get it? stock made from
    stalks...ahem...more later on this)
    1 medium Onion
    Fresh garlic to taste
    Salt to taste

    Here is a recipe I came across for asparagus soup. What can I do to alter this recipe to make it phase 1 friendly? Of course replace the whole milk with lf milk. Anything else? Is the Evaporated milk OK if I use FF instead?

  • ff evaporated milk is fine. also dump the cornstarch in phase one to be 100% compliant.
  • I use the fat free evap milk in recipes all the time and it works fine. You can use arrowroot instead of the cornstarch as a thickener.
  • like Nessa and Barb said, cornstarch isn't allowed.....you could go the arrowroot route or puree half the soup and add it back to the rest of the soup. It should thicken it nicely.
  • Where do I find arrowroot? In the spices section of the grocery store? I have never seen it, is it a powder?

  • Arrowroot is a powder and usually available in the spice section of nice supermarkets.
