Mmmmm....I had forgotten about my dear escarole! I was browsing some recipes on Kalyn's Kitchen, and a recipe reminded me of it. I don't know what it is about it, but I really love it!

Ilove escarole, especially in soups. It's a vital ingredient in Italian Wedding Soup, with the tiny meatballs, diced chicken, and orzo. I love it braised with cannellini beans and lots of garlic, and I sometimes add it to spaghetti sauce, too.
