Default Having Chili for dinner - suggestions for corn bread sub?

I'm making my famous chilli tonight and luckily the way I make it is PH1 legal. The only thing is that I usually enjoy it with a thick slice of corn bread.

Anyone come across this issue and come up with a decent replacement?

I know I'm reaching at this point but do you blame me?!

no, I don't blame you. I completely understand. I love cornbread and we always used to have it with our chili. Sorry to say, I just learned to do without.

Oh cornbread! How I miss it! But unfortunately, corn is a food to be avoided on the SBD. It's high on the glycemic index and is very high in sugar.

I cannot vouch for these recipes but...

3 1/2 ounces ground almonds or almond flour 1 ounce melted butter 2 large eggs 1/2 teaspoon baking powder 1/4 teaspoon salt
  1. In a small bowl, mix wet ingredients, then work in the dry ingredients.
  2. Pour into a greased microwave-safe container (about 6-inch square, or thereabouts).
  3. Microwave for 2 minutes at power level 8.
  4. Cut into 8 slices, about 1 carb per slice.
  5. Serve with butter.

MOCK CORNBREAD

1 2/3 cups cooked white beans
4 eggs
1 teaspoon baking powder
2 tablespoons light olive oil
1/3 cup Splenda

Combine all ingredients in the blender and process until smooth. Pour into an 11 x 7” pan and bake at 200ºC/400ºF about 25 mins until toothpick is clean when inserted in the center.
