Lightbulb Basic Quiche Cups: Can be altered due to taste!

I made these last night modified from a basic quiche recipe I had at home.

This makes 12 regular sized muffins perfectly.

10 eggs
4 cups of your choice of shredded cheese, sauteed vegetables, and/or meat.

Beat the eggs in a bowl while you cook the veggies/meat to your liking. Combine the eggs, veggies and/or meat, and cheese in bowl and mix through.

Spoon into muffin tin that has been sprayed with pam and bake at 350 for about 20 minutes (keep an eye on them).

The ones I made last night I used 1.5 cups of shredded LF cheddar cheese and 2.5 cups of sauteed mushrooms, onions and broccoli.

I had two this morning for breakfast and they were amazing!

new here, 1st post, jumping right in!

I made a variation of these as well and they are very well received in my house a good breakfast on the go. Pop them in the microwave for a few and they are perfect to eat in the car

My husband's new favorite breakfast.

Quiche cups are one of my "go to" breakfasts. I use whatever cheese and veggies are in my fridge (almost always include zuchini and frozen spinach), bake them, freeze them and eat them for a quick healthy breakfast. A great way to get in those breakfast veggies.
