Slow Cooker Ground Beef Casserole
16 oz. extra lean gr. beef
2 cups sliced raw potatoes
1 & 1/2 cups sliced carrots
1 cup chopped celery
1/2 cup chopped onion
1 cup frozen peas -thawed
1 10 oz. can low fat/sodium tomato soup
1/2 cup water
1 tsp. dried parsley flakes
1 can mushrooms, drained
salt and pepper to taste
In large skillet brown the meat, onion, celery and mushrooms until vegetables are tender and meat is no longer pink. Spray a slow cooker with cooking spray, such as Pam butter flavour, then add the meat mixture, the potatoes, carrots, and peas. Stir in tomato soup, water, parsley flakes and salt and pepper to taste. Cover and cook on low 6 to 8 hours.
