Default Broccoli Soup - simple recipe!

Got this recipe from family a few months ago when they brought it to our family pot luck!

It's very delicious. They had bacon bits sprinkle into it, but for a healthier version lets just leave those out . When served, you can sprinkle in a little bit of cheese to make it cheesier if you so wish (I'm guilty of same, BUT I use low-fat versions) !!!

Broccoli Soup
Makes 2 quarts

• 2 lbs broccoli
• 2 large carrots
• 1 medium onion (or substitute with onion flakes)
• 2 cups water
• 1 chicken OXO cube <would it be right to assume that there's a low sodium version?>
• 1 tbsp Mrs. Dash Garlic & Herb Seasoning
• 1 tsp black pepper
>>>Cook above ingredients in a large pot until tender. Then add:

• 2 cups skim milk
>>>Process in blender. Return to pot. Stir in:

• 2 cups small broccoli florets (previously cooked)
• ¼ cup shredded Regianno cheese

Sprinkle each serving with bacon bits and extra cheese (optional) when served

I found the 1tbsp of Herb & Garlic Mrs Dash to be way to spicy for me - instead I use 1 1/2 tsp to just get the flavor and not the spice.

I believe you can freeze this recipe - I know I do. I'm just gonna say "Freeze Up To 3 Months". I usually freeze in small containers so when I'm hungry for soup I have a portion right there ready for me to unthaw.

i just made broccoli soup last week. this recipe is very similar to what i did. I like to use condensed fat free milk, just seems creamier overall. also, to kick up the protein a bit, i pureed a can of canelinni beans (and white, mild flavored will do) - it added a almost cheesy quality to it. i do very much love cheese in my broccoli soup, so instead of adding it into the whole pot i just sprinkle when heating.
