Zucchini vegetable soup
makes a big amount, you can cut in half
5 zucchini(bigger than medium) chopped
1 can diced tomatoes drained
1 can white beans, well rinsed
2 carrots chopped
about 10 leaves sage finely chopped
2 cloved garlic finely chopped
1/2 onion finely chopped
salt and pepper to taste
6 wedges of lite laughing cow
8 cups chicken stock and then about same amount of water. My stock is homemade so its highly concentrate.
bring the whole thing to a boil and then simmer until veggies are tender.
then throw in the cheese and wait a few minutes for it soften. Now blend with your immersion blender.
