Creamy Vegetable Tomato Soup

  • Ok, don't knock it til you've tried it. I looked at Chris like he was CRAZY when he told me what was in the soup, but it was thick, creamy, and delicious. You could do any variation you like. We just used what was left in the fridge. I think I'm going to do an all tomato one in the future.....

    Creamy Vegetable Tomato Soup

    Ingredients:

    6-8 cups water
    OP veggies (we used broccoli, cauliflower, carrots, peas, onion, garlic, banana peppers, and tomatoes)
    3 oz. tomato paste
    1/4 cup FF half and half
    Extra Virgin Olive Oil
    Spices (oregano, basil, salt, pepper, etc)

    Secret Ingredient:

    1 hot dog bun (whole wheat of course) torn into small pieces

    Cook the onion and garlic in a little olive oil until onion is soft but not brown. Add veggies, water, tomato paste, spices, and hot dog bun pieces. Heat to a boil, then let simmer on med to med-low heat for 30-45 min, until veggies are soft. The bread will dissolve and make the soup thick. During the last few minutes, stir in the half and half.

  • No ma'am, the hot dog bun dissolved completely without needing to puree. Left a nice hearty THICK vegetable soup. Nice and creamy. Mmmm.
