3 Wonderful Phase 1 Chilis

  • I've listed 3 different chili's that I made while on Phase 1 and continue to make on Phase II. I have many non SBD friends who now also eat these!

    Roasted Chicken Chili
    In large soup pan, saute ½ large green pepper, ½ large onion, 2 cups fresh baby spinach (chopped) and ½ cup roasted red peppers (in can) chopped in olive oil. Salt and Pepper. Add 3/4 cup cooked chicken breast chunked. Add 1 can of chopped tomatoes, 1 can of chicken broth, 1 can of black beans drained and 1 can of white beans drained. Simmer about 45 min. until chili/stew consistency.

    Three Bean Chili
    In large soup pan, saute ½ large green or red pepper, ½ large onion in olive oil. Optional - add 1 jallepeno chopped finely - minus seeds. Add 1 lb 97/3 lean hamburger. Brown. Salt and Pepper. Add about 1 Tbsp cumin and 1 tsp chili powder. Add 1 can chopped tomatoes, 1 can of black beans drained, 1 can of dark red kidney beans drained and 1 can of green beans drained. Simmer until chili/stew consistency - about 15 min.

    Mexican Chicken Chili
    In large soup pan, saute 1 red pepper, 3/4 large onion and chopped cilantro in olive oil. Optional - add 1 jallepeno chopped finely - minus seeds. Add 1 lb cooked chicken breast chunked. Salt and Pepper. Add 1 can of chopped tomatoes or fresh tomatoes, 1 can of black beans. Simmer until chili/stew consistency - about 15 min.
