hi all, I got this from watching Rachael Ray and it is yummy!
Pour some extra virgin olive oil in a soup pot and saute up a couple of chopped cloves of garlic and a few chopped shallots(I used 1/2 an onion and 3 cloves). Add in one large(28 oz) can of crushed tomatoes, 1 can (14oz) of diced tomatoes and 1 normal can of chicken or veg broth. Bring all to a boil and then simmer for 20 min. Salt and pepper to your liking and then cover the top with fresh spinach so that it wilts in. That's it!
adding freshly grated parm or a handful of ff mozz works nicely too.
This would feed about 4 hearty soup bowls.
