Vegetable Beef Soup

  • Ingredients:
    2 lbs. stew beef (fat trimmed off)
    1 medium onion
    3 Tbsp Heinz 57 SauceŽ (or worsheire, sauce either works)
    1 large can diced tomatoes
    1 small can diced tomatoes
    1 can vegetable or beef broth (or 1 cube buillion works fine too)
    1 tabelspoon butter or butter substitute
    Any frozen, canned or fresh vegtables you like.
    Pinch of kosher salt and pepper

    Sprinkle kosher salt over beef 10 to 15 min prior to cooking. Cook beef in a large water filled stew pot or tall soup pan with onion and Heinz 57 SauceŽ. When the beef is nearly done add remaining ingredients and continue to cook. Be sure to keep plenty of water added and stir occasionally. The longer it cooks the better the flavor.

    Makes about 2 dozen servings. Approx 6 net grams of carbohydrate per serving.

    *I made a few substitutions for my taste. Since I don't like whole or chunked tomates I just used tomatoe sauce. I used a can of mixed vegtable that had beans, green beans, cabbage and peas. I also added a small can of mushrooms and another can of green beans since I really like them. Depnding on your phase you might want to add some brown rice, or diffrent vegetables to your taste.
