Default Peanut Butter Stew

I wasn't sure about this but it was REALLY good!


2 Tbs peanut oil
1 onion, finley chopped
2 pounds round steak, cut into 1.5 inch pices
1/2 cup creamy natural peanut butter
1 1/2 cup cold water
1/3 cup double strength tomato concentrate (in the tube)
2 cups hot water
1 tsp Chipolte pepper powder (couldn't find this so I used red pepper flakes
about 1/2 tsp)
2 bay leaves
Salt to taste
Pepper to taste


Cook onion in oil over med heat. Add steak and lightly brown on all sides. In a small bowl combine the cold water an peanut butter, puor over steak. Dilute the tomato concentrate with the hot water. Pour over stew. Stir. Add the pepper powder, bay leaves, salt and pepper. Reduce heat to low, cover, and cook for about an hour or until the meat is tender. Remove bay leaves and serve.

YUMMY...tastes almost like an Asian sauce.
