Default Barley, Lentil & Rice Soup

I made this yesterday since we hadn't gone for groceries yet. I calculated everything and came up with it being 1 pt. per serving for 2 cups of soup. (I had bowls of soup all over the counter top). It's very filling and tasted pretty good.


I filled a large soup pot 3/4 full with ff beef broth
1/4 c. lentils
1/4 c. long grain rice
1/3 c. barley
1/2 c. instant brown rice
1 c. uncooked whole wheat penne pasta
2 stalks of celery diced
1 can green beans drained
3 small cans tomato sauce
Italian seasoning
Salt to taste

Cook until the celery is tender. Makes 8-2 cup servings.
Each serving is 1 pt.
92 calories
<.05 g. fat
3.63 g. fiber

If you wanted to divide it up into smaller portions here is the totals for the whole pot (or if you were really hungry, lol).
735 calories
29 g. Fiber
3.5 g. Fat
