Coq Au Oui Soup (chicken)

    This is from Dr. Atkins' New Diet Revolution (yellow book) p.364 Poultry main dish recipes, but I always fix it for soup. It's my favorite no matter how I fix it. It's rich and doesn't take much to fill you up.

    6 servings

    4 pounds chicken parts
    1/4 pound bacon, diced
    1/2 stick butter
    1 cup red wine
    1 cup chicken stock
    3 cloves garlic
    1 bay leaf
    2 cups minced onions
    3 cups mushrooms caps, sliced
    salt to taste
    *for soup desired amout of chicken broth
    *heavy cream, if desired

    Saute' diced bacon in butter until golden. Romove from skillet and save.

    Thouroughly wash and dry chicken. Brown in bacon fat.
    Remove and set aside.

    Saute' onions and mushrooms. Return chicken and bacon to pan. Add chicken stock, garlic, wine, and bay leaf. Simmer gently 40 minutes to 1 hour in uncovered skillet. Add salt to taste.

    *For soup, add desired amount of heavy cream and chicken broth, or just broth. Be careful not to boil cream. Just heat a little and serve.

    I have also added water chestnuts and spinach as well. Pork is great with this too.
