leg of lamb with garlic and rosemary butter

  • 1 leg of lamb on the bone about 2kg's will feed 6 people or there abouts. garlic 4-5 sticks of rosemary fresh if possible 20g butter salt and pepper. a bit of cream for the gravey.

    1 leg of lamb with lots of fat on it hold a thin knife about half an inch form the tip and stab the lamb aobut 25 times on each side up the depth of your fingers.

    mix the garlic and rosemary having stripped the pines from the stalks and chopped with the better and make to a past then massage deeply into the lamb filling all the holes Roast for 30mins covered in foil then the rest of the time without follow cooking guidlines then take from teh oven when cooked cover with foil and leave for 20 mins.

    meanwhile make the gravey from the pan fat add a little cream to thicken and then reduce i like to add some pepper here as i'm in to hot food.

    i serve this with a baby leaf salad served with olives and fetta cheese drizzled in vinagrette made from olive oil vinegar and pepper

    serve and enjoy.
