1 tablespoon fresh lime juice
1 tablespoon olive oil
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
4 (6-oz.) halibut steaks -I used tilapia
Combine everything in a ziploc bag and let marinate in fridge.. overnight if possible.
1/2 cup diced fresh pineapple -I used canned
1/2 cup diced fresh mango
1/2 cup peeled and diced cucumber - I used English Cucumber
1/2 cup diced red bell pepper
3 tablespoons chopped fresh cilantro
4 teaspoons fresh lime juice - I used bottled.
1 jalapeno pepper, seeded and minced
salt and pepper to taste
Mix all the salsa ingredients together and refrigerate until ready to use.
Grill, bake, pan fry the fish.. how ever you prefer. Serve with the fresh salsa on top.
