Default Wave 2--Crockpot Chicken Cacciatore

I love using my crockpot, especially on days when I don't get home from work till 8 pm. This recipe is one I could literally eat 3 times a week. It tastes so rich that people will think you did a lot more than just throw everything in the pot! The leftovers are even better, IMO.

Crock Pot Chicken Cacciatore

(Note: feel free to add extra herbs to this, but I like it as is)

4-6 servings

4 chicken breasts (no skin, bones optional)
1 large onion, thinly sliced
2 6-ounce cans tomato paste
6 ounces sliced mushrooms
1 cup slice carrots
2 or 3 zucchini, sliced
1 green bell pepper, finely chopped
3 stalks celery, chopped
2-4 cloves garlic, minced
2 teaspoons oregano
1 teaspoon dried basil
1 teaspoon salt
1/2 cup dry white wine (red works, too)
1 tablespoons olive oil
1 teaspoon crushed red pepper flakes, optional

Place onions in bottom of crock pot. Add chicken pieces and top with vegetables.

Stir all the other ingredients together and pour over the chicken and veggies.

Cook on low heat 7 to 9 hours or high heat for about 3 to 4 hours. Serve over pasta or brown rice.

Note: adjust the veggies to your tastes. I like adding a lot of extra ones so this can be a meal in itself, but it's also great with a salad on the side.

Thanks for the recipe! I love cacciatore and have just started really using my crockpot so this was a great find. I've got this simmering as we speak. MMMMM! I didn't have any zucchini but I added black olives, a can of chickpeas and 2 or 3 diced anchovy fillets. I bet eggplant would be really nice, too and so would some spinach. I so cannot wait for dinner time! Gawd, I love Sonoma food!

Very Good and easy recipe. I didn't have zucchini so I doubled up on the mushrooms and It was way good!! THanks for that one!
