wave 2 barley and peas pilaf
1/2 c onion, chopped (I left this out)
1 clove garlic minced
1 T of olive oil
14.5 oz reduced soduim chicken broth
1 1/4 c water
2/3 c barley
1 t lite soy sauce
10 oz frozen peas (ooops I put in 16 oz)
In medium sauce pan, cook onion and garlic in oil until onion is tender. Add broth, water, barley, and soy sauce; bring to a boil. Cover, reduce heat and simmer for 35 minutes. Add peas and continue simmering 10 to 15 minutes until liquid is absorbed.
My family loved this one!! Even the three year old ate it up after saying "Mom what's that in 'tween my peas?"
I filled the plates halfway with this to account for 1/4 veggie and 1/4 grains.
