Mock Mashed Potatoes
You'll either love this or hate it. I personally cannot tell much of a difference between these and potatoes, but I already like cauliflower. YMMV
1 T fat free sour cream
1 T olive oil - was butter but changed to olive oil to make Sonoma friendly. Can add some Butter Buds or Molly McButter to give "buttery" taste
Salt and pepper
Cook cauliflower until soft. I like to do this step a day or two ahead because leaving the cauliflower to dry out a bit in the fridge makes your mock 'tatoes less watery.
Put cauliflower in blender or food processor with olive oil and sour cream, blend.
Add salt and pepper to taste. Serve hot. This is very important. This tastes NASTY if it's not hot enough
You could also add garlic and a variety of herbs and spices to this. Experiment.
This reheats well.
