Wave 1 Vegetarian Caesar Salad

  • First of all, make the dressing - this will make 1 cup, so could last you for several meals, depending on how many people are eating. Combine the following into a blender and blend until smooth:

    1/2 can of cannellini beans with their liquid
    Juice of 1 lemon
    1 tsp lemon zest
    2 cloves garlic
    1 tsp dijon mustard
    1/4 cup grated parmesan
    1/4 cup EVOO
    Salt and pepper to taste

    Then take a large bowl and place the following in it, for each person who will be eating the salad:

    2 tbsp of the dressing you just made
    1/2 cup chopped tomatoes
    1/2 pack quorn "chicken" pieces
    1/2 tbsp grated parmesan
    2 tbsp spring onions (aka scallions or green onions)
    1 cup chopped romaine lettuce

    Toss together and serve.
