Antipasto Kabobs
Found this on Taste of Home. Easy to beachify and yummy. I'm going to make them for Christmas.
Antipasto Kabobs 20 ServingsPrep: 35 min. + marinating Ingredients: 1 package (9 ounces) refrigerated whole wheat cheese tortellini 40 pimiento-stuffed olives 40 large pitted ripe olives 3/4 cup Italian salad dressing (no or low sugar) 40 thin slices turkey pepperoni Fresh parsley sprigs, optional Directions Cook tortellini according to package directions; drain and rinse in cold water. In a large resealable plastic bag, combine the tortellini, olives and salad dressing. Seal bag and turn to coat; refrigerate for 4 hours or overnight. Drain and discard marinade. For each appetizer, thread a stuffed olive, folded pepperoni slice, tortellini, ripe olive and parsley sprig if desired on a toothpick or short skewer. Yield: 40 appetizers. P.S. I think it would be good to add some veggies also to the marinade - pearl onions, carrot chunks, mushrooms... Cherry tomatoes and provolone cheese chunks would be good too, but I wouldn't add them to the marinade. |
Thanks for this one, Schmoodle, what a great looking recipe! I'm going to make it for one of our rescheduled holiday parties, too, and will make some without the pepperoni for the vegetarians in the family. :)
