If you like spinach and artichoke side/dip, then you are going to love this one. I eat it as a hot side dish as well as a cold dip with raw veggies.
1 cup frozen spinach
3 or 4 artichokes harts. (Canned packed in water)
1 Tlb. low carb Ranch dressing
1 Tlb. Parmesan cheese
Cook frozen spinach in a frying pan on low heat (Covered) till all water has evaporated stirring occasionally. Do not add any water to frying pan, spinach makes its own water to keep it from sticking. Chop artichoke harts and add to cooked spinach. Add remaining ingredients and cook on low heat till cheese is melted.
You could also add cooked chopped chicken and make a complete meal in one pan.
