Stick To It Saturday Menu, June 17, 2006
Breakfast: Shredded wheat and bran, skim, equal, and fresh blueberries
Lunch: Sirloin burger, FF american slice, raw onion, pickle, and ketchup. FF cottage cheese.
Dinner: Core Cornmeal Chicken on the George Foreman, Oven fries, fresh green beans
Snack: ?

Not so Core today...
b: rice krispies, milk
l: ramen noodles (I know, I know), salad, milk
s: strawberry-banana smoothie
d: ww penne w/meat sauce, green beans, milk

What is cornmeal chicken?
B-eggs with peppers onions, turkey bacon , greentea
snack a piece of fruit
Lunch-mixed greens
snack-celery and peanut butte
Dinner- grilled chicken,side salad, and beet salad
water all day long

There is a recipe in our recipe forum for the cornmeal chicken. I haven't made it but everyone who does try it just loves it. I'll go see if I can find it for you, and will post it here.

Cornmeal Crispy Chicken
4 boneless, skinless chicken breasts (I use thighs)
1 beaten egg
3/4 cup yellow cornmeal
1/4 tsp. lemon pepper (I didn't use this)
1/4 tsp. cayenne pepper
1 tsp. garlic powder (I think I added more because we are garlic freaks!)
dash salt
1/4 cup grated Parmesan cheese (I used regular and counted points)
2 Tbsp. lemon juice
Rinse and drain chicken and pat dry. Place chicken between two sheets of
waxed paper and pound the chicken to 1/3" thick.
Pour beaten egg in shallow bowl. In a shallow pan, combine cornmeal, lemon pepper, red pepper, garlic poder, salt, and cheese. Brush chicken with the lime juice, then dip in beaten egg and then coat with the cornmeal mixture. Let sit on a wire rack for 20-30 minutes.
Spray George Foreman two sided grill with nonstick cooking spray. Cook
chicken for 4-7 minutes until thoroughly cooked, brown and crisp. 4 servings.
Here's another one you might like:
Cola Chicken
1 1/4 cups ketchup
Dash Worcestershire sauce
Dash white pepper
Pinch cayenne pepper (optional)
1 can Diet Pepsi
4 boneless skinless chicken breasts
1 Teaspoon of garlic powder or to taste
Olive oil cooking spray
Mix ketchup, Worcestershire and peppers. Add cola and mix well. Set aside.
Dust chicken with garlic powder. Heat a nonstick skillet medium-high. I usually throw in 4 teaspoons of canola oil so I can get my good oil for the day. Brown chicken on both sides. Add cola mixture. Reduce heat, cover and simmer 30 minutes or until juices run clear, turning once. Remove cover; increase heat to medium and simmer until sauce is reduced and thickened. Spoon sauce over chicken when serving. Works great with boneless skinless thighs too.

Hey, cornmeal chicken is a theme today. Kathy, I can't believe you haven't tried it!

s: popcorn and coke zero
And yes, I'm breaking the rice/potato rule. Didn't think about it until just now.
