Weekly Menus - Jan 8-14/2005
Would actually love to see what everyone is eating to get some good menu ideas - please join in!
Breakfast
muti grain cereal w/1/3 c bran buds
3/4 c lo fat milk
1 small sliced banana
Lunch:
turkey breast
salad w/oil & vinegar dressing
12 taco chips (3 points)
2 tangerines
1 banana
PM snack:
small fruit salad
1 grande decaf non fat cappucinno
1 ounce cheese (3 points)
Dinner:
shrimp
stir fried asian veggies w/1 tsp oil & teriyaki sauce
1 tsp cornstarch (??)
diet pepsi
Evening:
ginseng green tea
popcorn

Yumm, yours looks good.
My menu is a little out of my control today. My roommate is making dinner for us today and even though it's healthy, it's probably not CORE.
Here goes:
Breakfast/Brunch:
Egg
Canadian Bacon
Coffee no sugar
Lunch:
Just snacking due to late breakfast: Clementines and an apple
Dinner:
Chicken Vegetable Alfredo
Ingredients: chicken, broccoli, carrots, onion, garlic, ff milk, ff sour cream, whole wheat pasta, and ww flour
Is this CORE if all the ingredients are?
And a piece of fresh bread 2
diet coke
Yeah! 2nd day on CORE

Sounds like a good Core day to me! The bread is the only thing that's not but you have your 35 WPAs to use, so use them!

Sunday, January 8th's menu
Was so hungry last night - ended up eating 2 scrambled eggs and 1 slice toast!
Day 2- here goes....
Slept in:
Brunch:
3/4 c ff cottage
1/4 c ff sour cream
some chopped veggies mixed in: radishes, shallots, cucumber, tomato
1 slice toast (1)
1 pink grapefruit
tea w/milk & splenda
water
Afternoon snack:
1 dill pickle
microwave popcorn
diet pepsi
Dinner:
1 slice roast beef/top sirloin
1/4 baked squash w/cinammon & brown sugar (1/2 tsp?) = (1)
corn
brown rice
water
Decaf filtered coffee w/light cream (1)
I think I might need another snack before bed - maybe some more fruit and some milk or yogurt!

Froufy, you're a girl after my own heart! I love my tea with milk and Splenda.
Sunday, January 9th
Breakfast: One serving oatmeal made with skim; Added 1/2 cup of homemade applesuace to oatmeal.
Lunch: Chili Relleno Casserole
Snack: In blender, one packet Swiss Miss Hot Chocolate, one whole banana, 1 cup skim milk and 2 ice cubes. Yum....tastes just like a chocolate banana milkshake (use your imagination!)
Dinner: Mix field greens salad (mushrooms and tomato) with FF Honey Dijon dressing, Balsamic Chicken with Mushrooms, Roasted New Red potatoes with olive oil and garlic, fresh green beans with Smart Balance (points)
Dessert: 1/2 cup After Dinner Mint Mousse (1 point since made with FF Cool Whip)
6-8 ounce glasses water; 24 ounces black decaf coffee; 2 Decaf Diet Pepsis and 10 ounce hot decaf tea with skim and Splenda

Monday's Munchies
Hi Vickie,
Yup - strong tea - preferably English Breakfast or decaf Earl Grey - yum!
Have also started drinking some green tea as it is supposed to be good for
you.
Love that dinner you had - sounds absolutely delicious!
Monday, Jan 10:
Breakfast:
1 packet plain instant oatmeal w/1 tablespoon flax meal and some brown
sugar substitute
decaf coffee w/light cream (2)
banana
snack:
ff yogurt w/splenda
Lunch:
leftover teriyaki shrimp w/stir fried veggies
brown rice (which I now realize means I can't have any pasta/rice/potatoes
w/dinner!)
apple
Snack:
green tea
1 nutrigrain bar (3)
Dinner:
chicken breast (marinated in japanese dressing)
squash
brocolli
couscous
Have to go "watch" dd at tap class tonight - might bring a diet pepsi with me for comfort & support!
Still feeling pretty hungry tho - hope this stops soon!

Daisys - Welcome! Come chat with us on the Core Support board! I know you didn't ask but you didn't have any starch at all. Aren't you hungry? You need some starch for balance.
Breakfast: Farina made with skim milk
Lunch: Huge green salad (tomato, cukes, chicken breast, FF cheddar cheese, avocado) with FF Honey Dijon Dressing; fresh fruit cup; Hot decaf tea black
Snack: Banana, Splenda, Skim milk smoothie
Dinner: Chipotle Chicken with Rice (Core recipe)
Dessert: After Dinner Mint Mousse

Alright, I'm joining in to post my food for the day, per plan.
Tuesday, January 11th
Breakfast: 2 Cranberry-Orange Oatmeal Muffins
French Vanilla Tea
Lunch: Mediterranean Chicken Salad (chopped chicken breast, sundried tomatoes, celery, onion, ff sour cream, ff feta, black olives, dijon mustard, lemon juice & balsamic vinegar) on a bed of greens
Snack: Grapefruit or Apple (was supposed to have both; one as mid-morning snack and other as afternoon, but time got away from me)
Dinner: Country Omelet (4 egg whites, 1 yolk w/2% cheese, extra lean ham, ff sour cream and "hash browns" - potato cooked in microwave until crisp) - 1 point
Sauteed Mushrooms
Dessert: FF/SF Chocolate Pudding w/FF Whipped topping.
I am trying to have a different menu every week, with the same thing every day Monday through Friday afternoon, Friday evening through Sunday may vary.

Tuesday Tummyfillings
Hey Vickie - thanks - yes trying to do the water thing - I am slowly ramping up the ounces - yesterday about 40 oz of water along with other "liquids"....today about 50 ounces??
Tuesday:
Breakfast:
ff sf yogurt
decaf w/light cream
1 packet instant plain oatmeal w/1tbsp flaxmeal and some brown sugar twin
Lunch:
chicken breast
brocolli
kasha w/sauteed onions & mushrooms
apple
Later:
decaf non fat cappucino
1 tsp peanut butter (1)
Dinner
Bagel (5)
egg salad (2 hb eggs, ff mayo, 1 green onion)
big handful of grape tomatoes!
cucumber slices
2 dill pickles
diet pepsi
Had a "ladies meeting" to go to which usually has BIG DESSERTS/FOOD all over the place.
What I had: 3 pecans, 1 fig, about 6 red grapes and a cup of green tea
What I did not have: the cookies, the big honking CHOCOLATE DANISH RING with chocolate oozing out covered in white icing sugar, and sprinkled w/almonds, the dried fruit, the jelly beans.
But to be quite honest while driving home I realized I just ate the stuff "cuz it was there"...was not supremely hungry at the time - just saw everyone else eating and so I joined in - need to RETRAIN THE BRAIN not to eat unless I require nourishment.
All in all, not a bad day!

Okay Wednesday's wickedways:
Breakfast:
the usual: plain oatmeal/yogurt/decaf w/light cream (2)
Lunch:
leftover roast beef
peas
corn
another yogurt
PM snacks (very hungry and guzzling lots of water)
1 apple
small bag popcorn
veggies (grape tomatoes, celery, baby carrots, cucumber) w/lf ranch dip (2)
Planned dinner:
broiled rainbow trout
boiled potatoes
brocolli
pm snacks??
maybe cereal and milk if I'm really hungry!
So what is everyone else munching??

Hi there, thought I would post before I forget what I had
B: 2 egg muffins, filled with red pepper, onion, ff cheese
S: Protein Bar, 3 points (had to try it to see what it was like, it was ok)
L: Fibre One cereal with ff millk, with a banana
S: 1.5 cups popcorn
Supper: a huge salad filled with, sun dried tomato/basil tuna, celery, red/green peppers, maybe some carrots, no dressing, the tuna does it.......would love a boiled egg on it too but I am at my quota on that one then I will top this off with an orange/blueberry/grape bowl
Snack: Skinny Cow treat
To drink I have had coffee, water water water, just finished a cup of tea-plain

Hey glad I found you guys!!
Here is my day I talked of our Core Support....
B-oatmeal, unsweetened applesauce
Snack - 1 Cup of Grapes....yes fruit!!!!!
L-chicken breast, mixed vegetables
afterwork-my core soup, barley, ff chicken broth and mixed vegs
D-turkey burger, 1/2 baked potato
8pm snack-didn't have the smoothie, didn't feel like messing the blender :-)
instead I had 3/4 cup of cous cous....
so what do you think of my first total core day....not too bad, huh....
I drank all my water....I don't have a problem with that, thank goodness. I just gobble it down while working.....2 liter and then one when I get in and flavored water at work with Lunch.
and I had my coffee with my skim plus during the day.
You all are giving me great idea....I still have to do those egg quiches' sounds sooo good.
