I got the ice cream recipe from this site, but I can't remember who posted it first. This is what I did last night.
3 large bananas (or 4 small ones)
2 c. skim milk
splenda to taste
Cut up bananas and place in freezer for 30 minutes.
Place bananas and milk in the food processor along with the splenda.
Mix then place in the freezer. I love ice cream and didn't think it would make a lot, but it does. There is plenty there for me for the entire week.
Fried Chicken
I haven't tried this recipe yet, but I bought cornmeal yesterday and have chicken breasts out for tonight.
Preheat oven to 400.
Dip chicken in cornmeal then milk then cornmeal again.
Place chicken on pot on the stove top (with a couple of teaspoons of oil heated) and let the cornmeal brown. Then place chicken in the oven until chicken is cooked through.
Like I said, I don't know how the chicken will work and of course, if you use chicken strips, the chicken might be completely cooked by the time the cornmeal has browned. I will let you know.

Lisa is looks like you are doing great! Did you count the pts for that LF mayo? (it may not have been enough to equal a pt but just wanted to check) but everything looks good!
Jaymi, did you find out if that healthy choice sausage is Core? I'll go check for you.
