Default Quick 'n' Lazy Core Recipes

I'm looking for Core meal/snack suggestions and recipes that don't require pots, pans, or the use of an oven. I live by myself and work long hours away from home. My office has a FANTASTIC Core-friendly cafeteria (tons of fresh vegetables, fruit, grains, plain grilled fish, chicken, etc.), so I'm set for M-F breakfasts, lunches, and snacks.

What I need are suggestions/recipes for M-F dinners and desserts and all weekend meals and snacks.

Requirements: No pots and pans. Microwave and microwave containers are fine!

I'm sure a lot of us will benefit from these posts.

Your request is a tough one! Most good core meals require some cooking. I'll have to think about it. I'm sure others will have suggestions too. Of course there are salads, soups, veggies and dip, popcorn, but you can't just eat that. Do you have a crockpot?

I don't have a crockpot. But I will get one if it means a short cooking time and less to clean up!

There's one frozen Lean Cuisine meal that I love and count as Core. It's the Steak Tips Portabello. It's just meat and broccoli and is VERY good.

Thanks, I will look into that! I could nuke some frozen veggies as well to add to that.

I've also been nuking veggie burgers (Boca "Flame Broiled," Dr. Praeger's California Burgers, Trader Joe's Nirvana). Sometimes I crumble these up into whole-wheat pasta and top with a fat-free (or VERY low fat), sugar-free (or VERY low sugar) jarred tomato sauce from either Trader Joe's or a health-food store. But needless to say, I'm getting very played out on this.

I think a crockpot would be a good choice for you. You could put something in it in the morning, let it cook all day, then it would be ready when you got home. They even make crockpot liners now, so that there is no clean-up involved. You can make all kinds of soups, meat dishes, casseroles, etc. in a crockpot too.

I think I will get crocked!

I will buy a crockpot this weekend. But then I'll probably be asking for Core-ockpot recipes! I guess I could go through other crockpot cookbooks and make substitutions/omissions as I see fit. Thank you—that was a good idea!

We don't have a ton of crockpot recipes posted on our board, but here's the link to the ones we do have:

I'm sure we all have many others as well. One of my favorite things to do in the crockpot is italian chicken. I take a ton of chicken breasts or strips and pour ff italian over them with a little water; cook overnight or during the day and then eat on them all week. Very tasty!

Sorry! Yes, I meant fat free italian dressing. I usually just get the cheapest brand there is and pour a whole bottle over it!! And you are not an idiot!! We forget to include all of the details sometimes.

If you just look at the threads, it is usually towards the top. It is named "Getting Healthy Shortly on Core Board 40." Do you see it? You can also see the daily menu threads, etc. They are all listed there and you just click on the title of whatever thread you want to read.
