I found some today at Jewel. Any ideas what I can do with it.

Oooh, girl! My favorite salad is romaine (or the hydroponic butter lettuce), sliced strawberries, feta, and balsamic vinaigrette dressing. It is absolutely to die for, IMO.

Another Core idea would be on WW pasta with garlic, diced tomatoes, grilled chicken strips and the feta. Otherwise if you want to spend some points, you could make a little pizza with it.

Thumbs up Feta Cheese Uses

We use Feta cheese quite often as it adds a lot of flavor with only using a little.
Some of the things we do are:

Slice tomatoes, onions, avocodo. Add balsamic vinegar and a dribble of olive oil and some Feta cheese. Let sit for a few minutes and serve. You don't have to use all the ingredients - you can substitue the avocodo for something else too. It's wonderful.

We also use Feta cheese on roasted asparagus. I also use Feta or Bleu cheese in hamburgers to give them some zing so I vary the basic burger.

Like I said, you can use just a little and get a lot of flavor. And there are quite a few varieties too.

Welcome, MsMac! Are you a WW Core person?? (Actually doesn't matter to us, but I just wondered what brought you here!)

Your post reminds me that I saw a recipe for hamburgers that had two thin patties with feta between them, then they were smooshed together around the edges to seal. I should try that too.

crumbled feta, basil, chunk tomato, cucumber, olive oil, salt and pepper, add balsamic if you like it - makes a great salad

Here's a great salad for summer and if you use whole wheat couscous, its just as good

1 box couscous made according to package directions and cooled
2 chopped fresh off the vine tomatoes
1T fresh chopped basil
1/2 cup ff feta cheese
1/4 cup finely chopped red onion
light balsalmic vinegarette dressing

Combine in a bowl and let marinate about 20 minutes. Its great for a picnic and for stuffing all those tomatoes that are coming in right now.

Any suggestions from west coast people on where to get FF feta? I get FF cheddar from Trader Joe's, but didn't see any FF feta. I looked at my local Albertson's the other day, and couldn't find any there either. I wonder if Jewel is something else here on the west coast?

Jewel and Albertsons are in the same company. Do you have Kroger (I think Ralph's is the same). I found it there, and also at Target. I thought it was Athenos brand, but I can't find it on their website. Still looking around though ...

Dang--was hoping Jewel was Fred Meyer. No Kroger or Ralph's here, nor (gasp!) a Target, at least in the town I live in.

Thanks! We do have a Fred Meyer (oh, my, the King Soopers logo takes me back to my Colorado days) so I'll check there.

I just made and eggbeater omelet with the FF Feta cheese and it was MARVELOUS! What a great change of pace.

One day next week, I'm going to make the salad with the balamic vinagrette. Can I make my own? I have great balsamic vinegar. Do I just add a little olive oil to it? I have one of those little tornado mixers. That might work good.
