Recipe of the Day: Sweet & Saucy Meatballs

  • I've posted this before, but it's been a while. So this one is for our newbies...

    Sweet 'n' Saucy Meatballs

    Serving Size : 5

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 pound very lean ground beef
    1 egg
    1/2 cup quick cooking oats (Mom uses more oats, and more spices in the beef)
    1 1/2 cups water
    1 1/4 cups ketchup
    1 cup Splenda

    In a bowl, combine beef and egg. Sprinkle with oats; mix well.

    Shape into 1 1/2 inch balls.

    Place in a lightly greased 11 X 7 X 2 baking dish.

    Combine water, ketchup and sugar; pour over meatballs.

    Bake, uncovered, at 350 for 40-50 min or till meat is no longer pink.

    Serve over barley, brown rice, or couscous (or Minute Rice for the kids)

  • Is it just me or does this recipe seem awfully "sweet"? I usually try to use Atkin sf ketchup - not sure if I could add a cup of splenda? I suppose the cola/ketchup mixture could be poured over the meatballs instead? I think I would prefer that.

    How sweet are these things? (candy meatballs...lol)

  • They're not super sweet - they're more tangy. It probably depends on your ketchup. I'd say they're a little less sweet than sweet and sour sauce. If you wanted, I'm sure you could use less sweetener, or make them cola meatballs instead.
