Turkey Citrus Salad with Poppy Seed Dressing

Serving Size : 6

Amount Measure Ingredient -- Preparation Method

9 cups spinach -- washed
4 1/2 cups grapefruit -- cut into sections, drained, juice reserved
3 cups oranges -- cut into sections, drained, juice reserved
3 cups cooked turkey -- cubed
1 1/2 teaspoons honey (count points)
3/4 teaspoon dry mustard
3/4 teaspoon paprika
1/2 teaspoon garlic powder
3/4 teaspoon poppy seeds
1 dash ground ginger
1/3 cup fat-free mayonnaise

Prepare grapefruit and oranges. As you cut the fruit in half and then sections, gently squeeze (don't wring it, just a gentle squeeze) the halves to get some juice. Reserve about 1/4 cup juice for each fruit and set aside. Continue breaking fruit up into sections.

Arrange spinach on six dinner plates; then arrange grapefruit and orange sections alternately in spoke-wheel fashion on spinach. Place 1/2 cup turkey in center of each fruit wheel.

Dressing: In a small bowl, measure 1/4 cup reserved orange juice, adding grapefruit juice to equal 1/2 cup. Add remaining ingredients and mix thoroughly.

Pour dressing over prepared plates.
