I just happen to have a yummy-sounding recipe that calls for dried shitake mushrooms. Check out the Recipe of the Day thread: it's called Asian Primavera Stir-Fry.
I have made a Mushroom Parmigiana recipe in the past where I used the dried ones. I just reconstituted them, then put the marinara sauce and mozzarella cheese on top and baked. If you can find FF mozzarella, you'd have a good Core entree. Maybe even eat it with some whole wheat spaghetti.
