This super easy recipe is one of those that gets asked for over and over. It is so sinful, but with lo-carb we can easily fit it into plan! It's even been known to convert the "non-mushroom" lover. Try it and let me know!
12-16 large mushroom caps, stems removed
1 8oz block cream cheese
1 12oz block Jimmy Dean "HOT" sausage
Microwave sausage in bowl until cooked through, crumble. Do not drain (this allows juice to cook through mushrooms and adds flavor!) Add 1 block cream cheese and mix thoroughly. I then refrigerate mixture until it sets a little. Stuff mixture in mushrooms. Microwave on HI for 6 minutes at a time until juice has run to bottom of pan and mushrooms look soft.
The number of mushrooms will vary depending upon the size you use!
