This sounds yummy!
Grilled Zucchini and Onions (Serves 4)
3 medium Zucchini, cut into 1/4-inch thick slices
2 medium Onions, thinly sliced
1 envelope Italian Salad Dressing Mix
2 Tbs. White Wine Vinegar
1/4c Salad Oil
2 Tbs. Parmesan Cheese, grated
Toss the zucchini and onion slices together on a large piece of double-layer aluminum foil. Turn the edges of the foil up slightly, like a tray to hold the dressing.
Blend together the salad dressing mixture, white wine vinegar and oil. Pour the dressing over the vegetables and sprinkle the parmesan cheese over the top.
Wrap the vegetables loosely, double-folding the sealed ends. Grill about 4-inches from hot coals for about 25-minutes or until tender, turning the package at least once during grilling. Serve warm.
You may opt to prepare this in a 400-F degree oven, baking the vegetables for about an hour.
