I got this recipe of another Somersizing site.
1 head of cauliflower
4 hard boiled eggs, diced
4 ribs of celery, sliced
1 sm. onion, chopped (optional)
1 teasp. salt, pepper, celery seed, and dill weed
1 Tablesp. Dijon mustard (I left this out)
1 teasp. Splenda
Steam the cauliflower in the microwave for 10 min. Let cool, then dice. Add eggs, celery, and onions. In a small bowl, mix the rest of the ingredients together using enough mayo for proper consistency (1/2 to 1 cup). Toss with cauliflower mixture.
Note* If you find that the cauliflower is too liquidy, I press out the excess water with a potato ricer.
