  • Zucchini and Cheese Bake

    Puts that long stored food processor to good use. Recipe tastes much like a corn bread casserole! A little time consuming, but worth it if you crave comfort food!

    The original recipe used monterey jack cheese, but I think the cheddar would add more pop to it! I can say this is a recipe we'll make again, even though it made a mess of my food processor!


    4 Tbs butter, divided
    1 cup onion, finely chopped
    1 clove garlic, minced
    1 1/4 lbs zucchini, 1/8" slices
    1 cup Sharp Cheddar cheese, shredded
    1 egg
    1/2 cup sour cream
    1 tsp salt, or to taste
    1/2 tsp pepper
    1 oz freshly grated parmesan cheese



    1 Butter or spray a 6x8" baking dish or a 6-cup casserole dish.
    2 Run onion and garlic through food processor to dice for a shortcut.
    3 Melt 1 tablespoon of the butter in a large skillet over medium-low heat.
    4 Add the onion and garlic; sauté until the onion is soft and translucent. While cooking onion, run zucchini through food processor to slice thin. Transfer onion to a small bowl.
    5 Melt the remaining butter over medium-low heat in the same skillet. Add the zucchini and cook, stirring frequently until the zucchini is tender.
    6 Turn the heat to high very briefly; cook and stir constantly until most of the liquid has evaporated.
    7 Transfer to a food processor and pulse until smooth. Add all the remaining ingredients except the onions and parmesan cheese and pulse to combine.
    8 Add the onions and pulse just to combine. Pour into the baking dish. Sprinkle the parmesan cheese over the top.
    9 Bake at 350°F for 30 minutes or until golden brown on top and set in the middle.
