Cabbage recipes
 
I was in Fredericksburg Texas, and they had wonderful red cabbage that had been steamed and tasted a little vinegary. Does anyone have a recipe for something like this? It tasted points-free.

Otherwise, I start experimenting! Or go to the library for a german cookbook.

Braised Sweet and Sour Red Cabbage

2 small heads red cabbage
3 T. vegetable oil
2 medium onions finely chopped
1 apple peeled and cored and finely chopped
1 can 13 3/4 oz. chicken broth
1 cup apple juice or cider
1/3 cup cider vinegar
1/4 cup brown sugar
3/4 t. salt
1/4 t. black pepper
1/8 t. ground allspice
Cut cabbage into quarters and thinly shred. Discard core. In 8qt.dutch oven, heat oil over medium heat. Add onions and apple and cook unitl tender, about 10 min. Stir in cabbage and rest of ingredients. Heat to boiling over high heat. Lower heat to simmer and cook 1 houror until cabbage is tender stirring occasionally. Remove cover and cook at medium high heat for 15 min longer to reduce liquid stirring occasionally.

Cabbage Roll Casserole - 7 Points

1 pound extra lean ground beef -- cooked and drained
1 head cabbage -- chopped
1 can tomato soup
1 medium onion -- chopped
1 cup rice -- cooked and drained
3 tablespoons worcestershire sauce
1 teaspoon salt
1 teaspoon pepper

Brown ground beef with chopped onions and Worcestershire sauce. Place
half the chopped cabbage on bottom of baking pan. Top with half the
cooked beef mixture. Spread half of the rice over the meat mixture. (you
may add rice directly to the beef mixture and spread over the cabbage)
Repeat with a layer of cabbage and another layer of the meat mixture. Mix
the tomato soup with a can of water. Pour this over casserole. Cover
with aluminum foil and bake at 350 degrees for 1 hours.

Cabbage Rolls with Turkey Stuffing - 5 Points

1 head Savoy cabbage
1 pound ground turkey
1 egg
1 cup cooked brown rice
2 tablespoons turkey broth
OR
2 tablespoons chicken broth
1 teaspoon sage -- crumbled
1 teaspoon fresh parsley -- chopped
Salt
Black pepper
1/2 cup turkey or chicken stock
6 bacon slices

Remove twelve large leaves of cabbage, cut out tough inner part of rib.
Blanch each leaf one minute, until pliable. Combine ground turkey, rice,
egg, stock, sage, and parsley. Add salt and pepper to taste. Divide turkey
mixture into twelve parts, and form into four-inch ovals. Place an oval at
stem end of cabbage leaf, fold in sides, and roll up. Place roll in
shallow baking dish. Continue until all twelve rolls are in one layer in
baking dish.
Pour 1/2 cup stock over all. Lay strips of bacon on top. Bake at 375
degrees for 30 minutes, basting twice, and turning oven temperature down
to 350 if bacon browns too quickly.

Oriental Cabbage Salad
 
I posted this under another section, so I'll post it here, then erase that one!!

Does anyone have a recipe for the above? It has cabbage, sunflower seeds and Ramen oriental noodles (uncooked) in it. The only thing is the dressing to pour over it. It has a lot of oil in it. You mix the oil and the seasoning packet from the noodles together, along with some white vinegar. It is really good with the crunchy noodles in it, but does anyone have a lighter version of this salad?

I have done the same thing except I use balsamic vinegar instead of oil and vinegar and I love it.

What on earth did I do.....you guys will have to excuse me...I thought I was posting this as a reply to someone who asked if they anyone could up to a lighter version of a chinese salad using oil and vinegar...I am so confused??? :?:

Oriental Salad
 
This is one of my favs - know it by heart. It may be a little different since the Ramen noodles are full of fat.

Mix in large bowl:
1/3 Cup Cider Vinegar
2 Tbs Soy Sauce (I use Braggs)
2 Tbs Veg Oil
2 Tbs Honey
1/4 Cup Splenda

Melt 2 Tbs margarine in skillet & brown
1/3 cup sunflower seeds
broken chinese noodles (about 5 oz)

Toss into dressing mixture & add veggies:

Shredded Napa Cabbage
3 diced green onions
drained mandarin oranges
3 grated carrots

This is about 2 points for 1 cup. I've lightened it about as much as possible without sacrificing the yumminess.

0 point cabbage side dish
 
VERY SIMPLE!!!

4 cups of cabbage
2 tbls lite or regular soy sauce

heat a wok or non stick frying pan sprayed with pam
add cabbage and about 1/4 cup water and soy sauce...
Then cover and allow to cook until cabbage is tender stirring as needed, uncover ann allow to brown if desired and serve ;)

Makes 4 - 1 cup servings at 0 points

This is one even my 9 year old daughter asks for :D
