Red face Quick and easy Waldorf Salad

Ok, I made this for my lunch for work tomorrow, and of course tried a little bite to be sure I would like it (first experiment with waldorf)

1 (5 oz) can chicken breast
2 tbsp. light mayo
1 cup quartered grapes (the ones i used are colossal-so its only 8 grapes)
1 medium fuji apple (my preference- use whatever you like)

Cut up the apple into bite size pieces and cut grapes. Add all ingredients in a bowl and mix. Serve with either lettuce or light bread, 2 slices.

PTS - 9 (without bread) 10 with.

This makes a huge salad...you could probably get two meals out of it if you have a small appitite.

Bumping this up - question, do you think 9 points was total or per serving?

Would fat free mayo make this less points?

Fat free mayo would definitely lower the points on this recipe --

Also, it's 9 pts for the entire thing, I believe. (So if you divide it in half, it'll be 4.5 pts).


Just take the point value of the individual items and add them together. Voila!
