I have been finding all kinds of things to do with unsweetened almond milk and this sauce is a miracle! I used regular butter and flour because that's what I had on hand but you could also use 3 tsp of olive oil if that makes you feel better. I'm sure there are other butter substitutes that would work as well.
1 Tbsp butter
1 Tbsp flour
2/3 cup unsweetened almond milk
2-3 cloves minced garlic (I like garlic a lot
salt and pepper to taste
Put the butter in a pan heated to medium and add garlic.
When butter is melted, add flour and whisk. Let bubble for 1 minute.
Whisk in almond milk and turn to medium-low.
Stir and keep on heat until it's as thick as you would like...this happened very quickly for me.
You could also leave the garlic out and flavor the sauce with herbs or whatever else you'd like. It made 2/3 cup total, 2 servings would make this recipe 1/3 cup for 2 points!
