4 medium sweet potatoes, cooked*
1/2 cup orange juice
1/2 tsp cinnamon
1/2 tsp ground ginger
Remove potato skins, combine ingredients and mash.
Garnish with sliced almonds and dried cranberries if desired.
We had this as a side dish today but it was so good I could have served it as a dessert!
* Microwave method: Puncture potatoes with a fork. Place on paper towel or microwave-safe dish. Cook on high for 4-5 minutes for the first potato, plus 2-3 minutes for each additional potato. Turn potatoes halfway through cooking.
