I found this on recipezaar.com and made it last night. It was yummy!!
Spinach and Mushrooms with Garlic
1 - 9 oz. bag of baby spinach
2 cloves chopped garlic (or more if you like)
1 - 8 oz. carton of button mushrooms, sliced
1 T - EVOO
1 T - SBD approved butter (I used ICBINB)
Salt and Pepper to taste
Heat oil and butter together in medium skillet. Add mushrooms and garlic and saute for 3 -4 minutes. Add spinach and cook until wilted stirring occasionally. Salt and pepper to taste.
(Last night, instead of olive oil, I used Italian Dressing...YUM!)
