Someone mentioned that recipes with cauliflower are always wellcome so I thought I would share one I love. Its actually from the "Fit for Life" cookbook (ever been on that one
) and I used to have it alot in whole wheat pita pockets. Could be an option for phase 2. It is quite yummy on its own as well and I have it instead of rice. I dont have any exact measures for the recipe, sorry bout that.
Steamed cauliflower ( I use 1 full head) (it shouldnt be all soft but you should be able to mash it with a fork)
Fresh lime/lemon juice to taste (couple of tbsp) (hope this is allowed on Phase 1)
1-2 Tbsp Extra Virgin Olive oil
Pinch of salt
Freshly gound black pepper to taste
After having steamed the cauliflower mash it with a fork. It should'nt be like mashed potatoes, but a much rougher consistency with some chewy bits in it. Drissle oliveoil, lime/lemon juice, salt and black pepper and mix well. Has a very refreshing taste!
