Hummus or Hoummus

  • 2 (16 oz) cans chick peas, drained, reserve juice
    4 to 6 cloves garlic
    1 1/2 tsp. salt
    2 tbsp tahini (sesame seed paste)
    1/4 cup lemon juice (or more)

    Place chick peas in processor with garlic. Add salt, tahini & lemon juice. Add enough juice to make a thick creamy consistency. (Sometimes I add a touch of olive oil too). Check taste and add more lemon or salt if needed.

    This is soooo yummy.

  • Here's one that doesn't require tahini and tastes great!!

    1 - 15oz. can chickpeas
    1 T. toasted sesame or flax seeds
    3 T. plain LF yogurt
    2 T. lemon juice
    2 T. less 1 t. olive oil
    1 T. soy sauce
    1 t. sesame oil
    ¼ t. salt
    ¼ t. ground cumin
    ½ t. crushed garlic

    Blend all to form a smooth paste. Keep refrigerated until ready to use.
  • I love hummus but I always make my own because I like to control the tahini, cumin,lemon,oil etc......if your having trouble getting the taste right always add less lemon than you need because you can always add more but you can't take it out......I usually start with a can of chickpeas (drained and washed), approx 1/3cup tahini, about 1-2 tsp cumin (this spice makes all the difference and makes it more like what you would get in a restauarnt..very traditional for hummus), between 2-6 cloves of garlic (I love garlic )...about 1/4 cup extra virgin olive oil and lemon to taste (I don't like it to lemony)...and then salt and pepper to taste. It is the best .....
